Salvatore tends to some very very old free-standing vines that are dry irrigated and looked after following biodynamic principles. The natural approach extends to his physical management as well, removing all non-manual machinery from use and hand harvesting. If you could see photos of his vineyards, you will see the bush vines surrounded by weeds, wildflowers and sporadic growth. In the cellar Salvatore is making wines that are super fresh and alive. It's like sipping on liquid energy to put it bluntly.
