Beau Paysage

‘Beau Paysage’ located in the high valleys of Hokuto-shi, Yamanashi Prefecture, Japan. From grape cultivation to winemaking, owner and founder Eishi Okamoto does everything here by his ‘hands alone’ and without the use of any machinery or chemical fertilizers.  The climate there is hot and humid with a lot of rain. The vines, which are cultivated organically and in the traditional Japanese style, are not ploughed in order to preserve a certain level of microbial life within the soil. The total production at Beau Paysage is quite small as Eishi-san farms only a 3-hectare surface. With a fiery passion for natural wine, his process is meticulous and respectful. 

Through a process of trial and error and acceptance of the Japanese climate,  Eishi-San says “The only thing we can do is to make wine with great care, accept things as they are and do the things to need to be done, one by one”.
