Starting as a little side project to his like as a chef, Brendan Cato sources high quality fruit from various hot spots around New South Wales. Even after working as a chef, Brendan already has experience working vintages in France and Italy since 2014 and so spinning his own up was a natural progression. The fruit is hand-picked from sites in Orange, Mudgeee, Canowindra and Brendan's first two vintages were done using his mate's equipment at Mecca Coffee in Sydney's Inner West. Carto wines are a perfect balance between complexity and drinkability. The wines are really outrageous value for what they offer in terms of flavour, liveliness, on point acidity and made to be sipped young.
