Cidrerie du Vulcain

Jacques Perritaz makes transpiring cider in an old tile factory in the Swiss region of Gruyère. He became fascinated with the abandoned trees in the local area and began working with many rare varieties that are too low-yielding for commercial purposes.  There are never any indigenous yeasts or carbonation methods used - just true expressions of the array of fruits.  Quince and pears are also among the trees he has liberated and are used in particular blends.
