Fujiichi Shuzo
Founded back in 1870 Fujiichi Shuzo has an esteemed history in sake, however, as the demand for quality driven products fell away during the 80's and 90's it's been an uphill battle for the brewery. Fujiichi's concept is to create a brand that marries the rice type with the yeast strain depending on the quality of the rice sourced each year. It's his belief that you can make good Koji whilst also having an intimate knowledge of rice grown each year, you can make great sake.
