After discovering that Osaka has a history of grape growing dating back over 120 years, Satoshi Fujimaru sought to preserve this vanishing local heritage by beginning to cultivate grapes on an abandoned farm in Kashiwara City, Osaka back in 2010, focusing on the Delaware variety and following a viticultural philosophy of lutte raisonnée — where no chemicals are used unless absolutely necessary. Fujimaru has now opened two "urban wineries", one in the centre of Osaka and the other on the edge of Tokyo city.
Fujimaru is now making some of the most recognized and loved wines throughout Japan, celebrating local grape varieties whilst respecting compatibility with cuisine that is delicate and umami-laden.
