The I Castagnucoli based in the Euganean Hills where Nicola dal Santo produces both wine and oil in minute quantities.
The vineyard is about two and a half hectares with a production of only around 10,000 bottles. The vineyards, dating back to the 1970s, are divided into various areas and therefore have different terroir characteristics.
Nicola, in 2010, after studying to become an archeologist returned to the land continuing the work of his father. Since 1980 Nicola's father had been practising with spontaneous fermentation and Nicola's work comes from a love for the territory in which he grew up. His intent is to improve it, increasing and safeguarding biodiversity and decreasing runoff damage, while keeping the turf unaltered.
