Similarly to Oscar Hermann (Combes Wine), Pat Underwood's kindling for his wine obsession came from Melbourne's City Wine Shop. Over the last few years he has honed in his winemaking skills and now producing a few exceptional wines.
Pat runs his negotiant winemaking project out of Colbinabbin and Malmsbury in Victoria. He sources fruit from sites that resonate with him, but of special note are the Bannockburn sites that are minuscule in size, chemical and systemic free and low yielding. Not only a talented hand, but immensely is immensely dedicated to making wine in a minimal intervention manner, that ensures the wines are a true representation of a season and place.
