Halfway between Riems and the traditions of Champagne and Baume, with its Burgundian culture, Aurélian chose to study in Baume. Eight generations of looking after their own vines in Champagne's most southerly appellation. The pursuit of purity, elegance and age-worthiness is central to Aurélian’s process now. The farming continues to be certified organic, the winemaking avoides chemical intervention and incorporates use of barrels and wild ferments.
