The Margaret River duo, Sarah and Iwo, have used a blend of Semillon and Chardonnay for their organic farm and homestead. As always the fruit was hand harvested, whole bunch pressed and naturally fermented in a mixture of concrete eggs, large format French oak and stainless steel. It is this unique combination, alongside natural production methods, that allows for a wine which has the rich touch of buttery biscuits, as well as a lovely bright character with notes of fresh lemon peel. Bottled unfiltered and unfined, no additives only a minimal sulphur addition at bottling.
