A blend of all 7 permitted varieties. 30% Chardonnay, 30% Meunier, 30% Pinot Noir - the remaining 10% is a blend of Arbane, Pinot Gris, Pinot Blanc and Petit Meslier. The grapes come from three different terroirs - Chamery, Vrigny and Coulommes-la-Montagne. Direct press for all grapes, and then co-fermented. The wine goes through malo, and is aged in old 228L barrels for 11 months. Not fined or filtered, and zero sulfites added at any stage.
