Grapes are from our Adelaide Plains vineyard. Destemmer crushed, extended infusion period of maceration and wild fermentation on skins, before basket pressing. This unique reserve has matured gracefully in stainless steel and oak barrels. No corrections, fining agents, or Earth filters have been used in the creation of this wine, therefore stain and sediment may be present. Natural clarification through racking transitions and pad filtration before bottling in April 2024. - Domenico, Winemaker.
