Pure Pinot Noir, the grapes are destemmed and left to macerate for approximately 6 hours. We proceed with decanting into a concrete tank and spontaneous vinification in the tank for about twenty days. At the end of fermentation it is again decanted into a concrete tank where it rests until the second fermentation takes place. After aging for a minimum of 48 months I proceed with disgorgement and use the same wine for topping up. Pale pink colour, excellent evolutionary and tertiary note on the nose. On the palate, freshness and balance combine very well with the minerality. - Cherubini, Winery.
