A traditional-method sparkling rosé. The proportions of Pinot Noir and Durella vary slightly each year, reflecting the character of the vintage. The Pinot Noir is gently pressed and aged in wood, while the Durella, obtained from the second pressing of the Epochè base wine, ferments in stainless steel. The two components are blended before tirage, which is carried out using fresh Durella must. The wine then rests 24 months on the lees, developing complexity and fine texture. Disgorgement is done without dosage, using the same wine for topping up. - Vino Mito, Importer.
