‘Dashette’ or little dash represents an accessible offering of cool climate Victorian Chardonnay.
Hand-picked and pressed slowly. The juice was transferred to a mixture of old French oak and a stainless-steel tank. It was aged on lees for 12 months before being racked and blended, then aged for a further 3 months on fine lees in tank.
Offering aromas of lemon rind, fresh peach, nectarine, toasted almonds, struck match and sourdough. There is good substance on the palate, which feels generous. This is kept in check with refreshing acidity along with all the aforementioned fruits and an umami element adding to the complexity. - Loique Allain & Chris Dilworth, Winemaker.
