Hailing from Quintaine, Mâcon, in the southern end of Burgundy is Domaine Guillemot-Michel. Biodynamic since 1991, they're well-established archetypes of Burgundian natural winemaking. A rich, fully ripe wine with honeyed, ginger tones from Botrytis (think Sauternes) prevalent to the area. Some winemakers shy away from the botrytis but Guillemot-Michel instead lean in, and having made this wine for 41 years, they've mastered it.
