Domaine Thomas-Collardot - 2023 Montrachet Blanc La Rue Aux Vaches

The Domaine only began in 2010 when Jacqueline Collardot started to reclaim vineyards that the family had leased to cousins, Hubert & Philippe Chavy, however they have owned the vineyards for three generations. The first release from the Domaine was 2015 and her son Matthieu joined the Domaine in 2018. They farm organically ploughing with horses (avoiding soil compaction) and managing the seasons closely. The small size of the Domaine allows them to work this way and ensure that every piece of work that needs to be done in the vineyard to ensure high quality fruit is achieved and therefore allowing them eek out tiny volumes of stunning white Burgundy from Bourgogne thru to Premier Cru (no Grand Cru). 

Fermentation takes place in large 350 litre barrels (Francois Freres cooperage) with native yeasts. The preference is for slightly older barrels of 2nd, 3rd or 4th use which they feel allows the best expression of terroir however each year the addition of some new barrels with medium to long roasting are added in to replace the oldest barrels. The wines are aged on lees for 10 to 12 months before being finished in stainless steel prior to bottling - Continuum Wines, Importer.
