Golden Spring Wines - 2025 Rosé D’Assiette

Rosé D’Assiette is a little-known French term to describe gastronomic rosé, or literally, “plate rosé”. Referencing the wonderful food friendly wines of the Southern Rhone like Chateau Simone and Cibonne, and the stand-out textural and complex rosés produced at Cobaw Ridge, Josh Cooper Wines, and Eastern Peake, we set out to produce a rosé that we’d love to pair with food all year round.

Fully ripe shiraz grapes from Glenhope Vineyard in the Northern Macedon Ranges, picked on a cool April morning and fully destemmed, were gently bladder pressed over several hours in the Cobaw Ridge winery in East Pastoria. Wild yeast fermentation in stainless steel tank for three weeks, before racking into a Stockinger Hogshead to finish fermentation and malo across the cool East Pastoria winter. The rosé was bottled after ten months in barrel, with the addition of 10% shiraz rosé from the organically certified Cobaw Ridge.

On the nose, macerated strawberries and iodine. The palate is savoury and mouth-watering, with spice of cloves and white pepper, whilst remaining nicely balanced by red summer fruits: rhubarb, plum, red apple peel. There are slightly playful elements of raspberry jube and Turkish delight, and a herbaceous note that recalls French sorrel. Gently emerging tannins on the finish, coppery topaz in the glass.

The Rosé D’Assiette, as the name implies, will pair superbly with charcuterie, grilled seafood, or autumnal pasta dishes of confit rabbit or duck ragu. Only 30 doz of the inaugural vintage were produced for sale, so quantities are limited. Order now for drinking from March, or hold for 3 to 5 years in proper cellar conditions.

100% of the proceeds from 2025 Rosé D’Assiette sales will be donated to support bushfire recovery efforts in Harcourt and Lucyvale.
