100% Chardonnay from the Rohrlach organically farmed & certified vineyard in Williamstown. The Vines thrive on loamy soils over red & yellow clay, set on undulating hills at the foot of Hale Conservation Park. The Chardonnay was hand-picked at optimum phenolic ripeness & whole bunches were tipped into a stainless steel tank, enclosed to undergo carbonic maceration for about a week until CO2 pressure built up. The fruit was then foot stomped to gradually release the juice & feed the yeast. At the end of primary fermentation, the tank was sealed & kept closed for seven weeks. The must was pressed oxidatively in a horizontal screw press before moving to seasoned French barriques for six months of élevage.
