Joshua Cooper - 2021 Shay's Flat Cabernet

Josh Cooper is taking some of regional Victoria's best sustainable and organic/biodynamic vineyards and spinning diamonds. His Cabernet Sauvignon is utterly delicious. Full stop no returns. It's on the darker side of Cabernet, with cassis, chocolate and olive plus cedar and spice flowing through. Energy, personality, drive. The palate is fine and detailed like a piece of antique crochet. Give it a bit of time in the glass and behold it unfold. Australia has a long history with Cabernet, and though we most famously associate it with the Limestone Coast, Victoria has its heroes – cue the Shay's Flat vineyard in Landsborough in the Pyrenees. Fruit spent 12 months in barrel before a further 4 months in tank to tighten it all up.
