This is a sake from the maverick Miyoshikiku brewery, where Ryoichiro Mamiya leads with a 'no rules' philosophy while taking an artisanal approach often using local organic ingredients and unique yeasts. As a genshu (undiluted) sake it has a higher alcohol content which contribute to a more concentrated flavour. Bolder tropical fruit notes, more prominent acidity and a savoury umami finish give this sake a richer profile compared to more traditional styles.
