The grapes are subjected to temperature control by being placed in a cold chamber at 5ºC. Destemming and whole grape maceration before pneumatic pressing. Must separation. Static racking. Fermentation at controlled temperature. Ageing on fine lees for 6 months. Stabilisation in stainless steel until reaching sufficient maturity for bottling. Ageing in bottle in our winery until optimal moment of commercialisation.
