Strawberries and unknown jubes. Traditional method. Aiming for bubbly red that can be serious and playful at the same time.
Made from handsome Lambrusco grapes grown by the Chalmers family on the Murray River. Whole bunches straight into the press, the juice then fermented cool in stainless steel with naturally occurring yeast. Raised in old oak puncheons until bottling en tirage with mum barely three months from harvest. Secondary fermentation in the bottle, where it stayed on lees for 9 months. Disgorged February 2025.
