Small fermenters with varying percentages of whole bunch from none to 100% to add layers and lift. Hand plunged and gently pressed before gravity filling to barrels, a mixture of 300L hogsheads & 228L barriques. Malolactic fermentation occurred before winter in the cool underground cellar. Wonderfully lacy and elegant, the fruit is sitting in the red spectrum with cranberry and watermelon. A whiff of sandalwood brings a savoury complexity. This wine sits firmly in the medium weighted silky characteristic of Pinot Noir, yet has good concentration. A dainty fruit palate, some whole bunch use bringing some light stalk tannin and structure, only seasoned oak to compliment the fruit profile. - Warramate, Winery.
