Wildflower Brewing - St Thomas 2025

St Thomas was made by blending barrel aged golden mixed culture fermentation ale with 770kg of fresh, whole, handpicked, stemmed and destemmed, tree ripened Morello sour cherries from Thornbrook Orchard in Nashdale, NSW. After a seven month maceration and refermentation of fruit and beer, it was bottled and allowed to naturally carbonate and mature for four months before release.

Meesh's tasting notes: The most insane colour I have ever seen on this beer. On the nose it leads with a green, stemmy note followed up by a phenolic cherry character. The palate is just jam - full, round, generous sweet cherry, marzipan, vanilla. Like a bite of a perfect cherry. - Wildflower.
