Tim Stock, the man behind Les Fruits, after working for many years in the industry and having assisted with many vintages, is now transitioning to a life-long dream of making his own wines.
Les Fruits is Tim's current project, the result of 3 months of the year spent in the hills preparing and conquering vintage. The other 9 months back in Sydney working for a renowned wine distributor, however, it's Tim's dream to soon pack up in the city and head down south permanently.The wines are produced in a shed in the Basket Range and the winemaking simple and traditional. All wines are matured on lees in old French oak barrels and nothing is added except minimal sulphur at racking or at bottling. For the price you pay, these wines are quite frankly unbelievable.
