Tim Stock, the man behind Les Fruits, after working for many years in the industry as a sommelier, then distributor/importer has finally realised the dream of making his own wines.
Les Fruits is Tim's current project, the result of 3 months of the year spent in the Adelaide Hills conquering vintage and preparing his wines. The other 9 months are back in Sydney working for his renowned wine distributor/importer – Vinous. 2023 saw the first vintage in his own space with everything under the one roof and should be a watershed vintage. The winemaking is very simple and traditional; more no-fi than lo-fi. All wines are matured on lees in old French oak barrels and nothing is added except minimal sulphur at racking or bottling. For the price you pay, these wines are quite frankly unbelievable.
